This Holiday Season Celebrate Pie Renaissance With Pietisserie
Oakland, CA, October 20 2021 — This Thanksgiving, we consider it our duty to declare what has become obvious…that all pies are not created equal.
In the ’80s, Ben and Jerry, aware of the opportunity to offer the growing legions of culinary adventurers a new and original experience, shouldered the challenge to reinvent America’s ice cream vocabulary, and, voila: the explosion of delight we witness in today’s ice cream world.
But not so pie. Still encumbered by habit and too damn much sugar, the “Diner Pie” has been standard for a hundred years. It’s the time for a pie renaissance. And we are happy to lead.
The crest of this new wave is Pietisserie’s first seasonal pie shop in Palo Alto, California at the Town & Country Village, 855 El Camino Real, Suite 109, where from November 5th to December 24th, you can explore a delicious array of fifteen pies from our five visual categories and immerse yourself in our pie mandala display, newly styled every day.
“Over the years, my way of looking at pie has only become more particular,” says Jaynelle St. Jean, founder of Pietisserie, who’s known for making some of the nation’s most creative pies. “The years I’ve spent thinking about pie feel like a decade-long meditation on pie. Coming out of 2020, I’m ready to let people into that delicious and bold world.”
St. Jean’s pie mandala upends traditional pie categories in place of the aesthetic. Cocoa pies, with their enigmatic dark chocolate crusts, draw everyone to the table. Open pies omit a top crust and show their vivid fillings, whose color and texture are ingredient-driven. Crumble pies are textured by a topping of oats, butter, brown sugar, and cardamom. Neutral in hue at first glance, these fruit pies pop their colors upon slicing. Pastel pies are pretty: monochromatic by way of creamy citrus fillings in corresponding tonal shortbread crusts, while Woven pies intricately layer warp and weft, and can be assured to dazzle a crowd.
